Egg in Green Curry

Ingredients

Eggs
- 5
•
Mint leaves
- 1 bunch
•
Coriander leaves
- 1 bunch
•
Fenugreek leaves
- 2 bunches
•
Onions
- 3
•
Tomatoes
- 4
•
Green chillies (minced)
- 2
•
Salt
- as required
•
Chilly powder
- ½ teaspoon
•
Turmeric powder
- ¼ teaspoon
•
Garam masala
- ½ teaspoon
•
Oil or butter
- 1 ½ tablespoons
•
Lime juice
- 1 teaspoon
Method
1.
Cut
onions
,
tomatoes
and green
leaves
finely.
2.
Heat
butter
in a pan, season with aniseed when it splutters
add
onions
and
fry
for a minute.
3.
Mix
in
tomatoes
.
Cook
till it becomes soft.
4. Put all the minced
leaves
and
fry
over a low flame.
5. Sprinkle very little
water
if necessary.
6.
Add
broken
eggs
and other
ingredients
, continue
stirring
till it is scrambled well.
7.
Add
lime juice
before
removing
from fire.
8.
Serve
with chapatis.
