Egg and Red Pumpkin Kurma

Ingredients

Eggs (hard boiled)

Onion (chopped)
- 1

Cashew nuts (chopped)
- 2 tablespoons

Tomatoes

Red pumpkin
- 100 grams
•
Green chillies
- 2
•
Garlic
- 2 flakes
•
Cardamoms
- 3
•
Cinnamon
- 3
•
Cloves
- 2
•
Poppy seeds
- 2 teaspoons
•
Coconut (grated, fresh)
- 1 tablespoon
•
Red chilly powder
- ½ teaspoon
•
Coriander leaves (cut finely)
- 2 tablespoons
•
Coconut milk
- ½ cup
•
Curd (thick, fresh)
- 1 cup
Method
1.
Peel
and
chop
boiled
eggs
.
Peel
pumpkin
.
2.
Grind
it along with
tomatoes
,
chillies
,
garlic
, garam
masala
ingredients
,
poppy
and
coconut
.
3.
Heat
oil
and
fry
onions
till crisp.
4.
Add
chopped
eggs
,
ground paste
,
salt
and
chilly
powder
.
5.
Cook
till it becomes thick.
6. Whip
curds
and
add
it to the curry along with
coconut milk
.
7. When it is about to
boil
,
remove
from fire.
8.
Serve
garnished with finely
cut
coriander leaves
and fried
cashew nuts
.
