Egg Vegetable Curry

Carrots (finely cut)
- ¼ cup
•
Beans
- ¼ cup
•
Onions
- 2

Eggs
- 4
•
Salt
- as required
•
Coconut
- 2 tablespoons
•
Pepper
- ½ teaspoon
•
Green chillies
- 2
•
Oil
- 2 tablespoons
Method
1.
Cut
onions
finely.
Boil
diced
carrots
and
beans
.
2. Pound
coconut
,
pepper
and
green chillies
.
3.
Heat
oil
,
add
onions
fry
for, two minutes.
4.
Add
boiled
vegetables
with
salt
and
fry
.
5.
Break
eggs
one by one to the curry and
keep
frying
, when it is still moist
add
pound
coconut
mixture
fry
for a minute.
6.
Remove
from
heat
and
serve
with rice.
