Egg Stir Fry

Ingredients

• • Onions (small) - 20
• • Garlic - 10 flakes
• • Oil - 2 tablespoons
• • Eggs - 6
• • Cinnamon - 1 inch piece
• • Cloves - 4

Ingredients For Grinding Together

• • Coconut (grated, fresh) - ½ cup
• • Pepper corns - 1 teaspoon
• • Red chillies - 2
• • Aniseeds - ¼ teaspoon
• • Salt - as required

Method

• 1. Peel onions and garlic and chop finely.
• 2. Boil eggs, remove shells and cut into small pieces.
• 3. Heat oil season with cinnamon and cloves, fry garlic and then onions.
• 4. Add ground mixture and fry for one or two minutes.
• 5. Add cut pieces of egg and mix gently in reduced flame.
• 6. Cook for few more minutes and remove from fire.
