Drumstick Potato Eggplant Curry

Ingredients

• • Onions peeleds (small) - ¼ cup
• • Potatoes (diced) - ¼ cup
• • Drumsticks (cut into small pieces) - ¼ cup
• • Brinjals (sliced) - ¼ cup
• • Salt - as required
• • Jaggery - as required
• • Oil - 1 ½ tablespoons
• • Curry leaves - 1 sprig

Ingredients For Grinding Together

• • Coconut (grated) - ¼ cup
• • Red chillies - 8
• • Onion - 1
• • Ginger - 1 inch piece
• • Tamarind - lime size
• • Garam masala powder - ½ teaspoon

Method

• 1. Heat oil, add all the raw vegetables and fry in a reduced flame for few minutes.
• 2. Add ground mixture, with one cup of water, cover and cook till the vegetables are tender.
• 3. Add salt and jaggery.
• 4. Mix well till it is dissolved.
• 5. When the curry is thick enough to serve, add finely chopped curry leaves and remove from fire.
