Drumstick Potato Eggplant Curry

Ingredients

Onions peeleds (small)
- ¼ cup
•
Potatoes (diced)
- ¼ cup
•
Drumsticks (cut into small pieces)
- ¼ cup
•
Brinjals (sliced)
- ¼ cup
•
Salt
- as required
•
Jaggery
- as required
•
Oil
- 1 ½ tablespoons
•
Curry leaves
- 1 sprig

Coconut (grated)
- ¼ cup
•
Red chillies
- 8
•
Onion
- 1
•
Ginger
- 1 inch piece
•
Tamarind
- lime size
•
Garam masala powder
- ½ teaspoon
Method
1.
Heat
oil
,
add
all the raw
vegetables
and
fry
in a reduced flame for few minutes.
2.
Add
ground
mixture
, with one cup of
water
,
cover
and
cook
till the
vegetables
are tender.
3.
Add
salt
and
jaggery
.
4.
Mix
well till it is dissolved.
5. When the
curry
is thick enough to
serve
,
add
finely chopped
curry leaves
and
remove
from fire.
