Drumstick Khodel

Ingredients

• • Drumsticks - 4
• • Brinjals (slice lengthwise) - 3
• • Tamarind - lemon size
• • Salt - as required

Ingredients For Grinding Together

• • Red chillies - 8
• • Coriander seeds - 2 teaspoons
• • Cumin seeds - ½ teaspoon
• • Fenugreek - ¼ teaspoon
• • Pepper - ½ teaspoon
• • Coconut (grated, fresh) - ½ cup
• • Garlic flakes - a few

Ingredients For Seasoning

• • Oil - 2 teaspoons
• • Mustard seeds - ¼ teaspoon
• • Curry leaves (for garnishing) - 1 sprig

Method

• 1. Dry roast "For Grinding together" spices each separately and grind along with ½ cup of grated fresh coconut and few flakes of garlic.
• 2. Soak tamarind in enough water squeeze and take extract.
• 3. Cook chopped drumsticks and brinjal in diluted tamarind extract.
• 4. Add ground paste, salt and cook till thick.
• 5. Season mustard seeds and curry leaves, in oil and mix with Sambar.
