Dahi Mutton

Ingredients
•
Lamb
- ½ kg
•
Curd (thick, beaten)
- 1 cup
•
Ginger-garlic paste
- 2 teaspoons
•
Red chillies (dry)
- 10
•
Salt
- as required
•
Water
- 1 cup
•
Oil
- 4 tablespoons
•
Coriander leaves (chopped)
- 1 cup
Method
1.
Wash
the
meat
pieces.
Deseed
dry,
red chillies
&
break
into 2 inch pieces.
2. Rub the
meat
with dahi,
ginger garlic paste
, deseeded
red chillies
&
salt
.
3.
Keep
aside the marinated
meat
for 2 to 3 hours.
4.
Heat
4 Tablespoon
oil
in pressure cooker, pick up only the mutton pieces from the
marinade
and
add
to the hot
oil
, leaving the
marinade
behind.
5.
Roast
mutton,
stirring
continuously, until dry and
oil
separates.
6.
Add
the
marinade
. Bhuno mutton again, until dry and
oil
separates.
7.
Add
water
and pressure
cook
to give 2 whistles,
reduce
flame and
simmer
for 2 minutes.
8.
Remove
from fire. Check for tenderness.
9. Dry the excess
water
till the
masala
coats the
meat
.
Add
green
coriander
.
Mix
well &
serve
hot.
