Curry Leaves Rice

Ingredients

Rice
- 1 cup
•
Onions (small)
- ¼ cup
•
Garlic
- 7 flakes
•
Tomatoes
- 2
•
Salt
- as required
•
Oil
- 2 tablespoons
•
Cashew nuts
- 10
(optional)
•
Cloves
- 3
•
Cinnamon
- 1 inch piece
Ingredients For Grinding Together
•
Garlic (prepare: fry in oil)
- 4 flakes
•
Curry leaves
- ¼ cup
•
Coconut (grated, dry)
- 2 ½ tablespoons
•
Red chillies
- 10
•
Tamarind
- small lime size
•
Asafoetidas
- a pinch
Method
1.
Cook
rice
and allow it to cool.
2. Separate grains properly and
mix
with a Teaspoon of ghee.
3.
Cut
small
onions
,
garlic
and
tomatoes
into small pieces.
4.
Heat
oil
,
fry
cinnamon
and
cloves
,
add
garlic
,
onions
and then
tomatoes
.
5.
Fry
till
tomatoes
are cooked properly.
6.
Add
ground
masala
and
fry
in a high flame till good smell comes.
7.
Add
rice
,
salt
and
mix
well.
8.
Serve
garnished with fried
cashew nuts
.
Variation
• Omit
garlic
and
tamarind
.
Fry
curry leaves
,
red chillies
, fresh
coconut
and then
grind
it.
