Creamy Egg Curry with Yogurt

Ingredients

Eggs
- 5
•
Oil
- 2 tablespoons
•
Coconut (scraped)
- ½ cup
•
Red chillies
- 3
•
Onions
- 2
•
Tomatoes
- 3
•
Salt
- as required
•
Turmeric powder
- ¼ teaspoon
•
Dhania powder
- 1 ½ teaspoons
•
Curd
- ½ cup
•
Ground pepper
- ½ teaspoon
•
Cashew nuts
- 8
•
Ghee
- 1 teaspoon
Method
1.
Cut
onions
and
tomatoes
finely.
2.
Heat
oil
,
fry
onions
.
3. When it turns brown
add
tomatoes
and
fry
well till it becomes pulpy.
4.
Add
turmeric
,
salt
,
dhania powder
,
curds
and ground
coconut
mixture
.
5.
Add
enough
water
and allow it to
boil
.
6.
Simmer
,
break
eggs
one by one on the gravy.
Cook
till set.
7. Sprinkle
pepper
on the top.
8.
Fry
cashew nuts
in
ghee
and garnish it.
