Country Brinjal Chutney

Ingredients

Red chillies
- 6
•
Violet brinjal
- ¼ kg
•
Tamarind (soaked & extracted)
- big lime size
•
Salt
- as required
•
Oil (for frying)
- as required
•
Mustard seeds
- ¼ teaspoon
•
Urad dal
- 1 teaspoon
Method
1.
Cut
brinjals
into very fine pieces and
soak
it in
water
to prevent discolouring.
2.
Strain
the
water
and
fry
brinjals
using enough
oil
.
3.
Stir
fry
properly until raw flavour of
brinjals
are lost and transfer it to a plate.
4. In the remaining
oil
roast
mustard
,
urad dal
and
red chillies
.
5. Allow all roasted
ingredients
to cool thoroughly and
grind
it together with
salt
and
tamarind
.
6.
Add
brinjals
at the end and
grind
to a
coarse paste
.
7.
Serve
with idli, dosa, chapati varieties.
