Chicken Shaami Kabab

Ingredients

Chicken
- 500 grams
•
Egg
- 1
•
Daalchini/Cinnamon stick
- 1
•
Bari elaichis/Black cardamoms
- 2
•
Laungs/Cloves
- 4
•
Bread crumbs
- 1 cup
•
Garam masala
- ½ tablespoon
•
Onion (finely chopped)
- 1
•
Green chillies (finely chopped)
- 2
•
Pudinas/Mint leaves (finely chopped)
- 2 tablespoons
•
Salt
- as required
•
Oil (for deep frying)
- as required
Method
1.
Cook
the
chicken
mince with
daalchini
,
bari elaichi
,
laung
,
salt
and ½ cup of
water
, over medium flame until it gets cooked through and becomes absolutely dry.
2.
Remove
whole
spices
(
daalchini
,
laung
) and discard.
3. Allow to cool and
mix
in milk (2 Tablespoon),
bread crumbs
,
garam masala
,
onion
,
green chillies
,
pudina
and the yolk of an
egg
.
4.
Mix
well and
grind
in a food processor until smooth & fine.
5. Shape into small balls and flatten slightly to
make
shami kababs.
6. Lightly
whisk
the white of the
egg
.
Dip
each kabab in
egg
white and then coat with
bread crumbs
.
7. Deep
fry
in hot
oil
until golden brown.
Drain
on absorbent paper &
serve
hot with chutney.
