Chicken Kaathi Roti

Ingredients For Making Dough For Rotis
•
Maida/Plain flour
- 250 grams
•
Potatoes (boiled and grated)
- 2
•
Oil
- 1 tablespoon
•
Salt
- as required
Ingredients For Filling
•
Boneless chicken (cut into small cubes)
- 500 grams
•
Oil
- 3 tablespoons
•
Onion (prepare: ground to a paste)
- 1
•
Ginger-garlic paste
- 1 tablespoon
•
Tomato (chopped)
- 1
•
Chilly powder
- 1 teaspoon
•
Salt
- as required
•
Eggs (beaten)
- 2
•
Lemon juice
- 1 tablespoon
•
Onions (prepare: thinly sliced & mixed with some hari chutney)
- 2
•
Pudina chutneys
- 1 tablespoon
Method
1. To
prepare
the dough, sift
maida
.
2.
Add
grated
potato
,
oil
and
salt
.
3.
Mix
well.
4. Knead into a firm dough of
rolling
consistency with some
water
.
5.
Keep
aside covered.
6. To
prepare
the filling,
heat
oil
.
7.
Add
onion
paste
&
cook
till light brown.
8.
Add
ginger garlic paste
&
cook
for 1 minute.
9.
Add
tomato
&
cook
till
tomato
turns soft.
10.
Add
chicken
.
11.
Cover
and
cook
on low flame till
chicken
turns tender & dry.
12.
Remove
from fire and
keep
aside.
13. Squeeze
lemon juice
to
taste
&
add
a
pinch
of
salt
&
chilly powder
.
14.
Mix
sliced
onions
with
pudina chutney
.
15.
Keep
aside.
16. Beat
eggs
and
add
a
pinch
of
salt
&
pepper
.
17.
Keep
aside.
18. To
prepare
the rotis,
make
chapatis out of the prepared dough by
cooking
the rotis lightly on both sides on the tawa.
19.
Keep
the cooked rotis in a casserole.
20. At
serving
time,
heat
tawa.
21.
Add
1 Teaspoon of
oil
&
fry
the chapati on one side only.
22. Do not turn.
23.
Pour
2 Tablespoon of beaten
egg
on the chapati and
flip
(turn) the roti to
cook
the
egg
.
24.
Remove
from tawa,
keeping
the
egg
coated side up.
25. Sprinkle 1 Teaspoon
lemon juice
on the
egg
coated side of the roti.
26. Arrange
chicken
filling on one end of the roti.
27. Sprinkle some
onions
on the
chicken
filling and
roll
the roti forward tightly to form the Kaathi Roti.
28. To
serve
wrap the lower part of the rotis in a paper napkin.
