Chicken Fried Rice

Ingredients
•
Uncooked rice
- 2 cups
•
Chicken breasts
- 2
•
Green chillies (chopped)
- 2
•
Cabbages (chopped)
- ½ cup
•
Carrots (chopped finely)
- 2
•
Spring onions (chopped)
- 3
•
Soya sauce
- 3 tablespoons
•
Tomato ketchup
- 1 tablespoon
•
Ajinomoto
- ½ teaspoon
(optional)
•
Pepper
- ½ teaspoon
•
Salt
- 1 teaspoon
Method
1.
Boil
6-7 cups of
water
with 2 Teaspoon
salt
in a large vessel.
2.
Add
rice
to
boiling
water
.
Cook
rapidly for 8-10 minutes until the
rice
just turns soft but not mushy.
3.
Strain
, let it be in the strainer for a some time to
drain
well.
4.
Spread
the
rice
on a tray and let the steam escape to
keep
the
rice
grains separate.
5. Pressure
cook
the
chicken breasts
with ¼ cup of
water
and ¼ Teaspoon of
salt
to give 2 whistles.
6.
Remove
from
heat
and drop the pressure by putting some
cold water
on the lid of the cooker.
7. Cool,
debone
and
chop
the cooked
chicken
.
8.
Heat
oil
in a non stick wok.
Add
the
green chillies
.
9. After a few seconds,
add
the
vegetables
.
Stir
fry
for 1-2 minutes.
10.
Add
the
spring onions
&
chicken
. Saute for a minute.
11.
Add
the
rice
.
Add
the
sauces
,
ajinomoto
,
salt
&
pepper
,
stirring
constantly.
12.
Serve
hot.
