Cauliflower Kofta Pulao

Ingredients

Basmati rice
- 1 cup
•
Cauliflower
- 1
•
Onions
- 2
•
Garlic
- 6 flakes
•
Ginger
- 1 inch piece
•
Green chillies
- 3
•
Oil/Ghee (for frying)
- as required
•
Salt
- as required
•
Cashew nuts (broken)
- 1 ½ tablespoons
•
Bay leaf
- 1
•
Curry leaves
- few
•
Coriander leaves (cut)
- 2 tablespoons
•
Sugar
- ½ teaspoon
(optional)
•
Gram flour
- 2 tablespoons
•
Garam masala powder
- ¼ teaspoon
•
Turmeric powder
- ¼ teaspoon
Ingredients For Grinding Together
•
Coconut (dry)
- 3 tablespoons
•
Ginger
- ½ inch piece
•
Garlic
- 5 flakes
•
Red chillies
- 5
•
Green chillies
- 4
•
Coriander seeds
- 1 ½ teaspoons
Ingredients For Frying And Grinding
•
Cardamoms
- 2
•
Cinnamon
- 1 inch piece
•
Cloves
- 2
•
Pepper
- ½ teaspoon
•
Curry leaves
- few
Method
1.
Wash
and
soak
rice
for 10 minutes.
2.
Heat
half a Teaspoon of
ghee
and
fry
soaked
rice
(which is taken out from
water
directly) for two minutes.
3.
Cut
cauliflower
into big pieces and steam in pressure cooker for 3 or 4 minutes.
4. When it cools down
mash
well and
add
salt
,
garam masala powder
,
turmeric powder
,
gram flour
(besan) and
cut
coriander leaves
.
5.
Mix
well ,
make
into balls and deep
fry
till golden brown in colour.
6.
Keep
aside.
7.
Peel
garlic
and
slice
onions
.
8.
Heat
oil
in pressure cooker,
add
bay leaf
,
garlic
and then
onions
.
9.
Fry
till brown.
10.
Add
masala
paste
and
fry
till good smell comes.
11.
Pour
two cups of
water
.
12. When it starts
boiling
add
salt
and
rice
.
13.
Cover
and pressure
cook
for 10 minutes in low flame.
14. After opening lid
add
masala
powder
and
coriander leaves
.
15.
Mix
well and
serve
hot.
16.
Add
koftas just before
serving
.
17. Garnish with crumbled potato chips while
serving
.
