Cauliflower And Peas Pulao

Ingredients
•
Basmati rice
- 1 cup
•
Curd (fresh, thick)
- 1 cup
•
Oil
- 2 ½ tablespoons
•
Bay leaf
- 1
•
Cinnamon
- 1 inch piece
•
Cloves
- 2
•
Ginger-garlic paste
- 1 teaspoon
•
Cauliflower
- 1
•
Peas (fresh)
- ¼ cup
•
Onions (cut lengthwise)
- 3
•
Tomatoes (diced)
- 3
•
Salt
- as required
•
Coriander leaves (prepare: grind separately)
- 1 bunch
Ingredients For Grinding Together
•
Onions (small)
- 10
•
Green chillies
- 8
Ingredients For Spice Powder
•
Cardamoms
- 6
•
Cinnamon stick
- 1
•
Ghee
- a little
Method
1.
Fry
"For
Grinding
together" with 1 Teaspoon of
oil
and
grind
to smooth
paste
.
2.
Fry
"For
Spice
Powder
" equal number of
cardamom
and
cinnamon
in
ghee
and
powder
.
3.
Wash
and
soak
rice
for 10 minutes.
4.
Drain
water
and
fry
in half a Teaspoon of
ghee
till moisture is absorbed (2 or 3 minutes).
5.
Break
cauliflower
into big flowerettes.
6.
Heat
water
in a separate vessel, when it starts
boiling
add
peas
and
cauliflower
.
7. Close the lid and
remove
from fire.
8. After 5 to 10 minutes
drain
water
completely.
9.
Heat
oil
in pressure cooker and
fry
garam
masala
spices
.
10.
Add
onions
ginger garlic paste
and after few minutes
tomatoes
.
11. When it becomes pulpy
add
ground paste
and then beaten
curds
with a cup of
water
.
12. When it starts
boiling
add
salt
,
cauliflower
,
peas
and
rice
.
13.
Reduce
flame and pressure
cook
for 7 to 10 minutes.
14. After
removing
the lid gently
mix
garam
masala
powder
,
ground paste
of
coriander leaves
with a Teaspoon of
ghee
.
15.
Serve
hot.
