Carrot Pachadi

Ingredients

• • Carrots (grated, fresh) - 1 ½ cups
• • Coriander seeds/Dhania - 1 tablespoon
• • Red chillies - 7
• • Mustard seeds - ¼ teaspoon
• • Asafoetidas - a pinch
• • Tamarinds (soaked in water) - a little
• • Salt - as required
• • Oil (for seasoning and frying) - as required

Method

• 1. Heat little oil and fry red chillies, mustard, coriander seeds, till golden.
• 2. Fry carrots separately in little oil till raw flavour is lost.
• 3. Grind everything to coarse paste with tamarind and salt.
• 4. Sprinkle little water while grinding if necessary.
• 5. Fry mustard seeds in oil, add asafoetida in that and mix with pachadi.
