Cabbage Chutney

Ingredients

Onions
- 3

Garlic
- 5 flakes
•
Cabbage
- ¼ kg
•
Red chillies
- 10
•
Fenugreek seeds
- 2 teaspoons
•
Mustard seeds
- ½ teaspoon
•
Tamarind extract (thick)
- 2 tablespoons
•
Salt
- 1 ½ teaspoons
•
Jaggery (grated)
- 1 tablespoon
•
Asafoetida powder
- ¼ teaspoon
•
Coriander leaves (finely cut)
- 1 tablespoon
•
Oil (for frying)
- as required
Method
1.
Peel
and
chop
onions
,
garlic
.
2.
Grate
cabbage
,
fry
in
oil
properly and
keep
aside.
3.
Fry
onions
and
garlic
in
oil
separately until golden.
4. Transfer to a plate and allow to cool.
5. Dry
roast
red chillies
,
fenugreek
lightly and
powder
it along with
salt
.
6.
Add
fried
onions
,
garlic
, grated
jaggery
to that and
grind
to a
coarse paste
.
7.
Mix
tamarind extract
, fried
cabbage
and finely
cut
coriander leaves
with that.
8.
Heat
½ Teaspoon of
oil
,
add
mustard seeds
, allow to splutter,
mix
asafoetida powder
and
pour
on top of chutney.
9.
Mix
well and
serve
.
