Brinjal Tomato Chutney

Ingredients

Green brinjal
- ¼ kg
•
Green chillies (sliced)
- 5
•
Tomatoes
- 2
•
Onion (big)
- 1
•
Salt
- as required
•
Coriander leaves
- ½ bunch
•
Oil (for frying, for seasoning)
- as required
•
Mustard seeds
- ¼ teaspoon
Method
1.
Cut
brinjals
into very small pieces and
keep
it immersed in
water
to prevent browning.
2.
Cut
onions
,
tomatoes
finely.
3.
Heat
little
oil
in a '
frying
pan',
add
onions
,
green brinjals
and
fry
well.
4.
Add
green chillies
,
tomatoes
and
stir
until moisture evaporates.
5. Allow to cool thoroughly,
add
salt
,
coriander leaves
and
grind
to a coarse chutney consistency.
6. Season
mustard seeds
in little
oil
and
mix
with chutney.
7.
Serve
with idli, dosa varieties.
