Brinjal Onion Chutney

Ingredients

Green brinjal
- ¼ kg
•
Onions (peeled, small, finely cut)
- 10
•
Tomato
- 1
•
Tamarind (soaked & extracted)
- small lime size
•
Salt
- as required
•
Oil (for frying)
- as required
Ingredients For Roasting Together
•
Red chillies
- 5
•
Bengal gram dal
- 1 ½ teaspoons
Ingredients For Seasoning
•
Mustard seeds
- ½ teaspoon
•
Cumin seeds
- ½ teaspoon
•
Fenugreek seeds
- ¼ teaspoon
Method
1.
Cut
green brinjals
into fine pieces and
keep
immersed in
water
.
2.
Cut
tomatoes
finely.
3.
Heat
½ Teaspoon
oil
in a
frying
pan,
roast
chillies
,
bengal gram dal
and transfer to a plate.
4. In that same
frying
pan
heat
little more
oil
and
fry
cut
onions
,
brinjal
and
stir
fry
until colour of
brinjal
changes.
5.
Add
tomatoes
and
stir
until moisture evaporates.
6.
Strain
excess
oil
from
green brinjals
and allow to cool.
7.
Powder
roasted
ingredients
in mixie first.
8.
Add
salt
,
tamarind
, fried
vegetables
and
grind
to a coarse chutney consistency.
9.
Heat
little
oil
,
add
the mentioned
ingredients
, allow to splutter and
pour
over chutney.
Mix
well and
serve
.
