Brinjal Onion Chutney

Ingredients

• • Green brinjal - ¼ kg
• • Onions (peeled, small, finely cut) - 10
• • Tomato - 1
• • Tamarind (soaked & extracted) - small lime size
• • Salt - as required
• • Oil (for frying) - as required

Ingredients For Roasting Together

• • Red chillies - 5
• • Bengal gram dal - 1 ½ teaspoons

Ingredients For Seasoning

• • Mustard seeds - ½ teaspoon
• • Cumin seeds - ½ teaspoon
• • Fenugreek seeds - ¼ teaspoon

Method

• 1. Cut green brinjals into fine pieces and keep immersed in water.
• 2. Cut tomatoes finely.
• 3. Heat ½ Teaspoon oil in a frying pan, roast chillies, bengal gram dal and transfer to a plate.
• 4. In that same frying pan heat little more oil and fry cut onions, brinjal and stir fry until colour of brinjal changes.
• 5. Add tomatoes and stir until moisture evaporates.
• 6. Strain excess oil from green brinjals and allow to cool.
• 7. Powder roasted ingredients in mixie first.
• 8. Add salt, tamarind, fried vegetables and grind to a coarse chutney consistency.
• 9. Heat little oil, add the mentioned ingredients, allow to splutter and pour over chutney. Mix well and serve.
