Brinjal Gotsu

Ingredients

Brinjal
- ¼ kg
•
Green chillies
- 4
•
Onions (finely cut)
- ½ cup
•
Tamarind (soaked & extracted)
- small lime size
•
Salt
- as required
•
Jaggery (grated)
- as required
•
Turmeric powder
- ¼ teaspoon
•
Tomatoes (finely cut)
- ¼ cup
Ingredients For Seasoning
•
Mustard seeds
- ¼ teaspoon
•
Urad dal
- 1 teaspoon
•
Bengal gram dal
- 1 teaspoon
•
Asafoetida powder
- 2 pinches
•
Curry leaves
- 1 sprig
Method
1.
Cut
brinjals
into very fine pieces and
keep
immersed in
water
until required.
2.
Heat
oil
in a '
frying
pan' and
add
chopped
green chillies
,
brinjals
.
3.
Stir
fry
until
brinjal
turns into dark colour.
4.
Pour
tamarind
extract
add
turmeric powder
and
boil
until thick.
5. Switch off the stove and
mash
cooked
brinjals
properly using a masher.
6.
Heat
oil
,
add
seasoning
and then
fry
onions
until golden.
7.
Add
tomatoes
,
stir
until moisture evaporates and then
add
mashed
brinjal
,
salt
,
jaggery
along with little
water
.
8.
Cook
until thick and
serve
.
