Brinjal Drumstick Curry

Ingredients

Onion (slice lengthwise)
- 1

Drumsticks

Potatoes
- 2

Brinjals
- 4
•
Tamarind extract
- a little
•
Coconut (grated, fresh)
- 1 tablespoon
•
Vangibhath powder
- 1 teaspoon
•
Salt
- as required
•
Oil (for frying)
- as required
Ingredients For Making Vangibhath Powder
•
Red chillies
- 2
•
Cinnamon sticks
- 2
•
Dhania
- 1 tablespoon
•
Bengal grams
- ½ teaspoon
•
Fenugreek
- 1 ½ teaspoons
•
Curry leaves
- 1 sprig
•
Asafoetidas
- a pinch
•
Ghee
- as required
Method
1.
Cut
all the
vegetables
into 2 inch pieces lengthwise.
2.
Heat
oil
,
add
mustard,
curry leaves
and then
onion
.
3.
Fry
till transparent,
add
other
vegetables
,
fry
for a minute,
pour
diluted
tamarind extract
(just enough to
cover
the pieces) and
cook
till
vegetable
becomes soft.
4. When moisture is absorbed completely,
add
salt
,
vangibhath powder
,
coconut
and
mix
gently for one minute.
Remove
from fire and
serve
hot with cooked white rice.
Method To Make Vangibhath Powder
1.
Fry
red chillies
,
cinnamon
,
dhania
,
bengal gram
,
Fenugreek
,
curry leaves
,
asafoetida
in little
ghee
and then
powder
coarsely in mixie.
2.
Keep
in an airtight, dry container.
