Braised Mutton

Ingredients
•
Boneless mutton (cut into 1 inch cubes)
- 750 grams
•
Black pepper powder
- ½ teaspoon
•
White pepper powder
- ½ teaspoon
•
Brandy/Rum
- 3 tablespoons
•
Soy sauce
- 1 tablespoon
•
Almonds (blanched & cut into slivers)
- 20
•
Pearl onions
- 10
•
Capsicums (cubed)
- 2
•
Arrowroots (prepare: dissolved in a little water)
- 1 teaspoon
•
Salt
- as required
•
Oil
- 2 tablespoons
•
Brandy
- ¼ cup
Method
1.
Marinate
the
mutton
cubes with
black pepper
,
white pepper
,
salt
,
brandy
& the
soy sauce
for 6-8 hours or overnight.
2.
Heat
oil
in a saucepan.
Add
the
mutton
with the
marinade
& saute over medium
heat
until browned & half cooked.
3.
Add
½ cup
water
,
onions
,
capsicums
and
almonds
&
cook
till tender over low
heat
.
4.
Add
the dissolved
arrowroot
to glaze the
mutton
.
5.
Stir
&
serve
hot with garlic bread.
