Beetroot Curry

Ingredients

Beetroots
- 2
•
Red chillies (broken into pieces)
- 3
•
Oil (for frying)
- as required
•
Salt
- as required
•
Sugar
- a little
•
Mustard seeds
- ¼ teaspoon
•
Black gram dal/Urads
- ¼ teaspoon
•
Coconut
- 2 teaspoons
•
Curry leaves
- 1 sprig
Method
1.
Scrape
outer skin and
grate
fresh
beetroot
.
2.
Heat
oil
in a pan,
add
mustard
,
urad
and then broken
chillies
.
3.
Fry
for a minute and
add
cut
beetroot
.
4.
Pour
just enough
water
to
cover
and close with a lid.
5.
Cook
till moisture is absorbed completely.
6.
Add
coconut
and
curry leaves
.
7. Sprinkle
salt
,
sugar
and
remove
from fire.
