Ingredients

French bean
- ¼ kg
•
Oil (for frying)
- as required
•
Salt
- as required
Ingredients For Seasoning
•
Mustard seeds
- ½ teaspoon
•
Urad dal
- 1 teaspoon
Ingredients For Pounding Coarsely
•
Coconut (grated, fresh)
- 1 ½ tablespoons
•
Green chillies
- 2
Method
1.
Wash
the
beans
,
cut
ends and
remove
side fibers.
2.
Chop
into fine pieces and steam in pressure cooker.
3.
Heat
oil
in a
frying
pan,
add
seasonings
and then cooked
beans
.
4.
Fry
well for few minutes,
add
pound
mixture
and
salt
.
5.
Mix
gently and
remove
from fire.
Note
• If you are
cooking
directly in pan,
fry
chopped
vegetable
for few minutes, sprinkle
water
and
cook
till soft.
• For
beans
alone
add
¼ teaspoon sugar to prevent colour change·of
vegetable
.
• Do not close with lid.
Note - Other Suggested Vegetables
• Carrot, Snake gourd, Broad
beans
, Banana stem, etc.
Variations
• Carrot and peas curry:
Cook
green peas separately.
Drain
off
water
,
grate
carrots. Follow the above procedure.
• After
frying
carrots in
oil
, sprinkle little
water
, close with lid and
cook
till done.
•
Add
peas, pound
mixture
,
salt
and
mix
well.
• Squeeze lemon just before
removing
from fire.
