Andhra Prawn Fry

Ingredients
•
Prawn (shelled and deveined)
- 250 grams
•
Curry leaves
- 4 sprigs
•
Onion paste
- ½ cup
•
Ginger-garlic paste
- 2 teaspoons
•
Coconut (grated)
- ¾ cup
•
Whole red chillies (prepare: soaked in a little water for 1 hour and ground to a paste with coconut)
- 3

Coriander powder
- 2 teaspoons
•
Turmeric powder
- ½ teaspoon
•
Salt
- 1 teaspoon
•
Tamarind pulp
- 2 tablespoons
•
Coriander leaves (for garnishing)

Method
1.
Wash
the
prawns
.
2. Put the grated
coconut
and red
chillies
in a grinder and
make
a thick
paste
with some
water
and set aside.
3.
Heat
oil
add
curry leaves
,
onion
and
ginger-garlic paste
and saute till brown.
4.
Add
the
coconut
paste
and saute till fat separates.
5.
Add
the
coriander powder
,
turmeric
and
salt
,
mix
well and
add
the
prawns
and
cook
till
prawns
are just cooked. (If you
cook
them too long, they will become leathery).
6.
Mix
in the
tamarind pulp
.
7.
Serve
hot garnished with the
coriander
.
