Aloo Palak

Ingredients For Making The Palak Puree
•
Oil
- 2 teaspoons
•
Garlic (chopped)
- 4 cloves
•
Ginger (chopped)
- 1 inch
•
Green chillies
- 2
•
Onion (finely chopped)
- 1
•
Palak (chopped)
- 2 cups
•
Water
- ½ cup
Ingredients For Making The Gravy
•
Oil
- 1 tablespoon
•
Baby potatoes (boiled & peeled)
- 15
•
Cumin seeds/Jeera
- 1 teaspoon
•
Cinnamon stick
- 1 inch
•
Bay leaf
- 1
•
Onion (finely chopped)
- 1
•
Tomato (finely chopped)
- 1
•
Turmeric powder
- ½ teaspoon
•
Salt
- as required
•
Water
- as required
•
Garam masala
- ½ teaspoon
•
Kasuri methis
- 1 teaspoon
Method
1.
Heat
oil
in a pan and saute
garlic
,
ginger
,
green chilly
and
onion
.
Add
chopped
palak
also and
fry
for some time.
2. Transfer it to a blender and
add
some
water
and then
grind
.
Keep
the
palak
puree aside.
3.
Heat
oil
in a pan and
roast
the boiled and peeled
baby potatoes
to golden brown and
keep
aside.
4. Again
add
oil
in a pan and sauté
jeera
,
cinnamon
and
bay leaf
.
5. And then
add
in chopped
onion
,
tomato
and sauté well till it turns soft and mushy.
6. Then
add
in
turmeric powder
and
salt
.
7. Then
add
prepared
palak
puree and
mix
well.
8.
Add
water
if required to the roasted
potato
.
9.
Simmer
for 5 minutes till the
potatoes
absorb the flavours.
10. Lastly
add
garam masala
and crushed
kasuri methi
.
11.
Serve
aloo
palak
with hot rice or roti.
