Aloo Palak

Ingredients For Making The Palak Puree

• • Oil - 2 teaspoons
• • Garlic (chopped) - 4 cloves
• • Ginger (chopped) - 1 inch
• • Green chillies - 2
• • Onion (finely chopped) - 1
• • Palak (chopped) - 2 cups
• • Water - ½ cup

Ingredients For Making The Gravy

• • Oil - 1 tablespoon
• • Baby potatoes (boiled & peeled) - 15
• • Cumin seeds/Jeera - 1 teaspoon
• • Cinnamon stick - 1 inch
• • Bay leaf - 1
• • Onion (finely chopped) - 1
• • Tomato (finely chopped) - 1
• • Turmeric powder - ½ teaspoon
• • Salt - as required
• • Water - as required
• • Garam masala - ½ teaspoon
• • Kasuri methis - 1 teaspoon

Method

• 1. Heat oil in a pan and saute garlic, ginger, green chilly and onion. Add chopped palak also and fry for some time.
• 2. Transfer it to a blender and add some water and then grind. Keep the palak puree aside.
• 3. Heat oil in a pan and roast the boiled and peeled baby potatoes to golden brown and keep aside.
• 4. Again add oil in a pan and sauté jeera, cinnamon and bay leaf.
• 5. And then add in chopped onion, tomato and sauté well till it turns soft and mushy.
• 6. Then add in turmeric powder and salt.
• 7. Then add prepared palak puree and mix well.
• 8. Add water if required to the roasted potato.
• 9. Simmer for 5 minutes till the potatoes absorb the flavours.
• 10. Lastly add garam masala and crushed kasuri methi.
• 11. Serve aloo palak with hot rice or roti.
