Aloo Gobi

Ingredients

Potatoes
- 1 cup
•
Cauliflowers
- 1 cup
•
Oil
- 1 tablespoon
•
Onions (chopped)
- ½ cup
•
Ginger-garlic paste
- 1 teaspoon
•
Tomato puree
- ½ cup
•
Salt
- as required
•
Red chilly powder
- 1 teaspoon
•
Turmeric powder
- ½ teaspoon
•
Cumin powder
- 1 teaspoon
•
Mango powder (dry)
- 1 teaspoon
•
Green peas
- ½ cup
•
Cumin seeds
- 1 teaspoon
•
Ginger (julienned)
- 1 teaspoon
Method
1.
Heat
oil
in a pan, deep
fry
potato
and
cauliflower
and
keep
aside.
2.
Heat
oil
in a pan,
add
onion
and sauté until it becomes translucent.
3.
Add
ginger-garlic paste
,
tomato puree
and
stir
for 5 minutes.
4.
Add
salt
,
red chilly powder
,
turmeric powder
,
cumin powder
and dry
mango powder
.
5.
Stir
until all the
ingredients
get
mixed well.
6.
Add
potatoes
and
cauliflower
,
mix
well.
7. Close the lid of pan and
cook
on low
heat
for 15 minutes.
8.
Add
peas
,
mix
them well and once again close the lid of pot.
9.
Cook
for another 5 minutes.
Add
cumin
,
ginger
and
mix
.
10.
Serve
hot with roti.
