Aloo Baingan

Ingredients
•
Potato
- ¼ kg
•
Round brinjal (small)
- ¼ kg
•
Oil (for frying)
- as required
•
Garam masala powder
- ½ teaspoon
•
Onions (chopped)
- ¾ cup
•
Red chilly powder
- 1 teaspoon
•
Cream (fresh)
- 1 tablespoon
•
Salt
- as required
•
Coriander leaves (finely cut)
- 1 tablespoon
•
Tamarind extract (thick)
- 2 ½ tablespoons
•
Tomatoes (chopped)
- ¼ cup
Ingredients For Making Ground Paste
•
Dhania
- 1 tablespoon
•
Poppy seeds
- 1 tablespoon
•
White sesame seeds
- 1 tablespoon
•
Peanuts (roasted)
- 1 tablespoon
Method
1.
Slice
brinjals
lengthwise.
2.
Cook
potatoes
,
peel
and then
cut
length-wise.
3. Deep
fry
both
vegetables
separately in hot
oil
till golden brown and
keep
aside.
4.
Heat
oil
in a pan,
add
onions
and
fry
till golden.
5.
Add
chopped
tomatoes
and
stir
for few minutes.
6.
Grind
each of the
ingredients
for
making
ground paste
separately.
7. After powdering the
ground paste
ingredients
add
2
onions
and
grind
coarsely.
8.
Add
ground paste
and
fry
till
oil
separates.
9.
Add
garam masala powder
,
salt
,
chilly
powder
and then
tamarind extract
.
10.
Pour
2 cups of
water
and
boil
till gravy becomes thick.
11.
Add
fried
potatoes
and
brinjals
.
12.
Cook
for few more minutes and
remove
from fire.
13. Garnish with
coriander leaves
and
serve
topped with fresh
cream
.
