Aloo Baingan Methi Curry

Ingredients

Brinjals
- 4

Potatoes
- 2
•
Fenugreek leaves
- 2 bunches
•
Field beans/Mochais (fresh)
- 2 tablespoons
•
Salt
- as required
•
Sugar
- as required
•
Coconut (grated, fresh)
- 1 tablespoon
•
Lemon
- 1
•
Oil (for frying)
- as required
•
Cinnamon stick
- 1
•
Cloves
- 4
•
Coriander leaves
- a little
Ingredients For Grinding Together
•
Ginger
- ½ inch piece
•
Garlic
- 4 flakes
•
Green chillies
- 6
Method
1. Pressure
cook
potatoes
and
field beans
.
2.
Chop
brinjals
, cooked
potatoes
into big pieces.
3.
Cut
washed
fenugreek leaves
and sprinkle little
salt
over that.
4. After few minutes squeeze and take the
leaves
.
5.
Heat
oil
in
frying
pan,
add
spices
and then
ground paste
.
6.
Fry
for a minute and
add
brinjal
pieces.
Fry
for few minutes.
7.
Add
potato
,
fenugreek
and
fry
for few more minutes.
8.
Add
field beans
, sprinkle little
water
and
reduce
flame.
9.
Cook
till dry and then
add
salt
,
sugar
.
10. Squeeze lime just before
removing
from fire.
11. Garnish with grated
coconut
and chopped
coriander leaves
.
