Warm Stir Fried Chicken Salad

Ingredients
•
Boneless chicken (cut into ½ inch strips)
- 150 grams
•
Cabbages (thinly sliced)
- ¾ cup
•
Capsicum (thinly sliced)
- ½
•
Carrots (grated)
- 1 cup
•
Salt
- ½ teaspoon
•
Pepper
- ½ teaspoon
(optional)
•
Lemon juice - 2s
- 3 teaspoons
•
Lettuce leaves
- as required
Ingredients For The Marinade
•
Soy sauce
- 2 tablespoons
•
Salt
- ½ teaspoon
•
Pepper
- ½ teaspoon
•
Ginger (cut into strips)
- ½ inch piece
Method
1.
Marinate
chicken
strips with
ingredients
under
marinade
for
2
-3 hours.
2.
Cook
chicken
and
marinade
together in a non stick pan till
chicken
is tender. (Some
water
will remain).
3.
Add
vegetables
and
seasonings
.
Cook
till just cooked but crunchy.
4.
Serve
warm on a bed of
lettuce leaves
.
