Vermicelli Upma

Ingredients
•
Vermicelli (broken)
- 2 cups
•
Onions
- 2
•
Green chillies
- 7
•
Turmeric powder
- ½ teaspoon
•
Ghee
- 2 teaspoons
•
Carrots
- 2
•
Shredded cabbages
- ½ cup
•
Capsicum
- 1
•
Potato
- 1
•
Peas (cooked)
- 2 tablespoons
•
Salt (powdered)
- 1 ½ teaspoons
•
Oil
- 4 tablespoons
•
Lemon
- 1
•
Tomatoes (chopped finely)
- 2
Ingredients For Seasoning
•
Mustard seeds
- ¼ teaspoon
•
Black gram dal
- 1 teaspoon
•
Bengal gram dal
- 2 teaspoons
•
Cashew nuts (broken)
- 1 tablespoon
•
Curry leaves
- few
Ingredients For Garnishing
•
Coriander leaves (cut)
- 1 tablespoon
•
Coconut (grated, fresh)
- 2 tablespoons
Method
1.
Mix
melted
ghee
to
vermicelli
and
roast
in a hot pan till golden brown.
2.
Heat
eight to ten cups of
water
in a broad vessel with a teaspoon of
oil
and little
salt
.
3. When the
water
starts
boiling
add
vermicelli
bits and
cook
till it is just tender.
4.
Drain
off
water
in colander and
pour
some more
cold water
on top and
drain
well. This prevents
vermicelli
from sticking each other.
5. Place deep curved pan on stove with
oil
and
add
seasonings
.
6.
Add
green chillies
,
onions
, other chopped
vegetables
and
fry
in till
vegetables
are tender.
7.
Add
tomatoes
at the end and
fry
till it becomes soft.
8.
Add
cooked
vermicelli
with
salt
and
turmeric powder
.
9.
Fry
in medium flame for another a few minutes.
10. Squeeze
lemon
and garnish with
coriander
and grated
coconut
.
Note
• This upma can be directly cooked by
pouring
water
(1:1) after the
vegetables
become tender and by
adding
fried
vermicelli
to that.
