Vegetable Biryani

Basmati rice
- 1 cup
•
Mixed diced vegetables (peas carrots, potatoes, cauliflower, cabbage and beans)
- 2 ½ cups

Onions
- 2
•
Garlic
- 7 flakes
•
Cardamoms
- 2
•
Cloves
- 3
•
Cinnamon
- 1 inch piece
•
Bay leaf
- 1
•
Marati moggus
- 3
•
Oil
- 2 tablespoons
•
Salt
- as required
•
Cashew nuts (fried, for garnishing)
- as required
Ingredients For Grinding Together

Coconut (grated)
- 14 cups
•
Coriander leaves
- 1 bunch
•
Garlic (prepare: fry in a little oil)
- 6 flakes
•
Green chillies (prepare: fry in a little oil)

Method
1.
Wash
and
soak
rice
for 10 minutes.
2.
Heat
oil
in pressure cooker,
add
masala
spices
and then
garlic
and
onions
.
3. When
onions
are crisp
add
rice
and
fry
for two minutes.
4.
Mix
masala
paste
and half cooked
vegetables
.
5.
Fry
till good smell comes.
6.
Pour
two cups of
boiling
water
and
mix
required
salt
.
7.
Cover
lid and pressure
cook
for 10 minutes in low flame.
8. Garnish with fried
cashew nuts
.
