Vangi Bhath 1 (Brinjal Rice)

Ingredients
•
Rice
- 1 cup
•
Variety green brinjal (long, thin)
- 200 grams
•
Red chillies
- 8
•
Coriander seeds
- 2 teaspoons
•
Coconut (grated, dry)
- 3 tablespoons
•
Black gram dal
- 1 ½ teaspoons
•
Bengal gram dal
- 2 teaspoons
•
Asafoetidas (powdered)
- a pinch
•
Ghee
- 1 tablespoon
•
Oil
- 2 tablespoons
•
Curry leaves
- few
•
Cashew nuts
- 1 tablespoon
•
Salt
- as required
•
Green peas (cooked)
- ¼ cup
(optional)
•
Lemons
- 2
Method
1.
Heat
little
ghee
and
fry
red chillies
,
coriander seeds
,
black gram dal
and
add
bengal gram dal
.
2.
Remove
from fire and
add
grated
coconut
to that hot pan and
mix
well .
3. When it cools down
powder
the
spices
.
4.
Cut
brinjals
into I inch long pieces and
soak
in salted
water
till required.
5.
Cook
rice
and allow it to cool.
6. Separate the grains.
7.
Heat
oil
and
add
the
seasonings
, when it is done
add
asafoetida
and
brinjals
.
8.
Fry
in medium flame till it is roasted well.
9.
Add
cooked
peas
, powdered
spices
,
salt
and
rice
.
10.
Fry
for few more minutes.
11.
Remove
from fire
add
garam
masala
powder
, fried
cashew nuts
and
curry leaves
.
12. Squeeze juice of
lemon
and
mix
well.
