Tomatoes Stuffed With Chicken Salad

Ingredients

Tomatoes
- 8
•
Chicken breast (boiled & shredded)
- 1
•
Pineapples (sliced)
- 2
•
Mayonnaises
- 2 tablespoons
•
Cabbages (shredded)
- 2 tablespoons
•
Cream (thick)
- 1 tablespoon
•
Tomato puree
- 1 tablespoon
•
Worcestershire sauce
- a little
•
Pepper
- ¼ teaspoon
•
Salt
- as required
Method
1.
Wash
chicken
.
2. Pressure
cook
with ½ Teaspoon
salt
and ½ cup
water
to give one whistle.
3.
Debone
the
meat
and shred it into small pieces.
4.
Wash
and dry
tomatoes
.
5.
Cut
a
slice
from the top and scoop out the pulp carefully.
6. Sprinkle
salt
and
pepper
inside the
tomato
.
7.
Keep
them upside down.
8.
Cut
pineapple
slices in small pieces.
9. Squeeze gently to
remove
excess syrup.
10.
Mix
pineapple
pieces, shredded
chicken
and
cabbage
in a bowl.
11.
Add
mayonnaise
,
cream
,
tomato puree
,
worcestershire sauce
and a dash of
pepper
.
12. Fill the
tomatoes
with the
mixture
.
13. Decorate on a bed of salad
leaves
.
14.
Serve
chilled.
15. Boiled prawns can be used instead of
chicken
.
