Tomato Fried Rice

Ingredients

Basmati rice
- 1 cup
•
Tomatoes
- 2
•
Coconut extract
- 1 cup
•
Water
- 1 cup
•
Cashew nuts
- 10
•
Onions (diced)
- 2
•
Carrots (diced)
- 14 cups
•
Peas
- ¼ cup
•
Oil
- 2 ½ tablespoons
•
Cardamoms
- 3
•
Cinnamon stick
- 1
•
Cloves
- 3
•
Salt
- as required
•
Coriander leaves (for garnishing)
- a few
Ingredients For Grinding Together
•
Green chillies
- 3
•
Red chillies
- 4
•
Ginger
- ½ inch piece
Method
1.
Wash
and
soak
rice
for 10 minutes.
2.
Drain
water
.
3.
Add
1 cup of
coconut extract
and 1 cup of
water
.
4. Pressure
cook
in separate container for 15 minutes.
5.
Remove
from fife and allow it to cool by
spreading
over a broad plate.
6. Separate the grains.
7.
Dice
onions
and
tomatoes
.
8.
Cook
carrots
and
peas
separately.
9.
Heat
oil
in a
frying
pan and
add
masala
spices
.
10. When it is done
add
onions
and
fry
till transparent.
11. Continue
frying
with diced
tomatoes
.
12. When it becomes pulpy,
add
ground paste
, cooked
carrots
and
peas
.
13.
Stir
in medium flame for few minutes.
14.
Add
cooked
rice
with enough powdered
salt
and
fry
in a high flame for few minutes till
rice
becomes hot.
15.
Serve
hot garnished with
cut
coriander leaves
.
