Tomato Carrot Soup

Ingredients
•
Oil
- 1 tablespoon
•
Onions (chopped)
- 1 cup
•
Garlic
- 3 cloves
•
Carrots (chopped)
- 1 cup
•
Tomatoes (chopped)
- 1 cup
•
Cream
- 2 tablespoons
•
Sugar
- 2 teaspoons
•
Salt
- as required
•
Mixed italian herbs
- 1 teaspoon
•
Mint leaves (for garnishing)
- a few
Method
1.
Heat
oil
in a pan.
Add
chopped
onion
and
garlic
cloves.
2. Saute till
onions
are translucent.
3.
Add
chopped
carrot
and
tomatoes
.
4.
Cook
until
tomatoes
and
carrots
are soft.
5.
Blend
the cooked
mixture
into a puree.
6.
Heat
pan and
pour
the pureed
mixture
.
Cook
for a few minutes.
7.
Add
cream
,
sugar
and then
salt
and
mix
well
8.
Add
mixed italian herbs
and black
pepper
powder
9. Garnish with
mint leaves
.
10.
Serve
with a side of bread.
