Tomato And Cheese Bhath

Ingredients

Basmati rice
- 1 cup
•
Onions (sliced)
- 2
•
Garlic
- 7 flakes
•
Tomatoes
- 5
•
Garam masala powder
- 1 teaspoon
•
Cheese (grated)
- 2 tablespoons
•
Kashmiri chilly powder
- 1 teaspoon
•
Salt
- as required
•
Ghee
- 1 tablespoon
•
Oil
- 2 tablespoons
Ingredients For Garnishing
•
Mint leaves (finely cut)
- 1 tablespoon
•
Coriander leaves (finely cut)
- 1 tablespoon
•
Cashew nuts (fried)

Method
1.
Soak
rice
in
water
for 10 minutes.
2.
Drain
water
and
fry
rice
with a Teaspoon of
ghee
for one or two minutes.
3. Blanch
tomatoes
in
hot water
for 5 to 10 minutes.
4.
Remove
from
water
and
peel
the skin.
5.
Grind
to smooth
paste
.
6.
Strain
and
remove
seed
.
7.
Mix
enough
water
to the juice to measure two cups.
8.
Cut
onions
lengthwise.
9.
Heat
oil
,
fry
garlic
and then
onions
till crisp.
10.
Add
masala
powder
,
salt
, little sugar,
chilly
powder
, with
tomato
juice.
11. When it starts
boiling
add
rice
,
reduce
flame and pressure
cook
for 10 minutes, or
cook
separately in heavy vessel for 20 minutes, with lid.
12.
Serve
hot garnished with grated
cheese
,
mint
and
coriander leaves
.
13. Decorate on top with fried
cashew nuts
and
onion
rings.
14.
Serve
hot with
onion
raita.
