Tofu With Cashew Nut Stir Fry

Ingredients
•
Tofu (cut into cubes)
- 200 grams
•
Cashew nut
- 100 grams
•
Oil
- 2 tablespoons
•
Garlic (minced)
- 2 cloves
•
Chilly flakes
- a pinch
•
Red onion (diced)
- 1
•
Green bell pepper (diced)
- 1
•
Red bell pepper (diced)
- 1
•
Yellow bell pepper (diced)
- 1
•
Spring onions (finely chopped)
- 2
•
Soya sauce
- 3 tablespoons
•
Honey
- 1 tablespoon
Method
1.
Start
by
heating
a non-stick pan on medium-high.
2.
Add
the
cashews
and toast until golden and fragrant.
3. This will take about 5 minutes, but don't go too far as they can burn quite quickly! Transfer to a bowl.
4. In the same pan over a high
heat
, dry
roast
the
tofu
until golden on each side about 8-10 minutes.
Remove
from pan, and put pan aside.

Heat
up the
oil
in a wok over high
heat
.
6.
Fry
up the
garlic
and
chilly flakes
in the
oil
until the
garlic
is just golden about 1 minute.
7.
Add
the yellow
onion
and bell
pepper
, and allow to soften slightly about 3-4 minutes.
8. Meanwhile,
whisk
together the
soya sauce
and the
honey
in a small bowl.
9.
Add
in the
tofu
, the
cashews
, the green
onion
, and the
sauce
, and
toss
to coat. Allow to
cook
another 3-4 minutes.
10.
Remove
from the
heat
and
serve
over fluffy white rice. Enjoy!
