Tandoori Chicken

Ingredients
•
Chicken (cut into 4 or 8 pieces)
- 800 grams
Ingredients For First Marination
•
Lemon juice
- 3 teaspoons
•
Chilly powder
- 1 teaspoon
•
Salt
- as required
Ingredients For Second Marination
•
Curd
- ½ cup
•
Malai/Cream
- 2 tablespoons
•
Garlic paste
- 1 tablespoon
•
Ginger paste
- 1 tablespoon
•
Kala namaks/Rock salt
- ½ teaspoon
•
Garam masala
- 1 teaspoon
•
Orange red colours
- few drops
•
Salt
- as required
Method
1.
Wash
and pat dry the
chicken
pieces.
2.
Make
deep incisions - 2 on breast, 2 on thigh & drum stick.
3.
Mix
lemon juice
,
salt
&
chilly powder
and rub over in the
chicken
pieces.
4.
Keep
aside for ½ hour.
5. In a bowl
mix
the second
marinade
.
6. Rub the
chicken
with this
mixture
.
7.
Keep
aside for 3-4 hours.
8.
Heat
the gas
tandoor
(flame should be minimum) or oven to 180°C.
9. Place the
chicken
on the
grill
or wire rack (in the oven place a tray underneath the
chicken
to collect the drippings).
10.
Grill
for 15 minutes.
11. Brush pieces with
oil
.
12. Turn the pieces and
grill
for another 10-15 minutes, till the
chicken
is dry & well cooked.
13. Be careful not to
make
the
chicken
pieces blackish and burnt looking.
14. Sprinkle dry tandoori
masala
.
Serve
hot.
