Szechwan Fried Rice

Ingredients

• • Basmati rice - 1 cup
• • Cabbages (diced) - ¼ cup
• • Capsicums (diced) - ¼ cup
• • Spring onions - 1 bunch
• • Peas (cooked) - ¼ cup
• • Carrots (diced) - ¼ cup
• • Soya sauce - 1 tablespoon
• • Tomato garlic sauce - 1 tablespoon
• • Worcestershire sauce - 1 tablespoon
• • Salt (powdered) - as required
• • White pepper powder - ¼ teaspoon
• • Ajinomoto - ½ teaspoon
• • Oil - 3 ½ tablespoons

Ingredients For Grinding Together

• • Red chillies - 6
• • Garlic - 4 flakes
• • Ginger - ¼ inch piece

Method

• 1. Wash and soak rice for 10 minutes.
• 2. Cook vigorously in 12 to 15 cups of boiling water, to which little salt and little oil is added.
• 3. Drain water and allow to cool completely.
• 4. Cut all the vegetables into fine even sized cubes.
• 5. Cut spring onion tops into ½ inch pieces.
• 6. Heat oil in a large frying pan.
• 7. Add ground masala and fry for a minute.
• 8. Stir in onions, carrots, capsicums and cabbage in the order given.
• 9. Fry in a high flame with ajinomoto.
• 10. When vegetables are tender add salt, onion tops and pepper.
• 11. Fry for a minute.
• 12. Mix other sauces and rice.
• 13. Fry well in high flame for few minutes.
• 14. Serve steaming hot.
