Sweet and Sour Cauliflower Pickle

Ingredients
•
Cauliflowers (finely chopped)
- 8 cups
•
Mustard oil
- 1 cup
•
Salt
- ½ cup
•
Red chilly powder
- 2 tablespoons
•
Mustard powder
- ¼ cup
•
Cumin seeds powder
- 2 teaspoons
•
Garlic (peeled)
- 20 flakes
•
Dates (chopped, seedless)
- ½ cup
•
Blanched almond
- 50 grams
•
Ginger powder (dry)
- 2 teaspoons
•
Cinnamon powder
- 1 teaspoon
•
Clove powder
- 1 teaspoon
•
White vinegar small bottle
- 1
•
Jaggery (grated)
- ½ cup
Method
1.
Wash
cauliflower
in
water
, to which little
salt
is added.
2.
Heat
water
in a large vessel.
3. When it starts
boiling
,
add
cauliflower
pieces to that and switch off the stove.
4.
Keep
closed for 2 minutes, and then
strain
it.
5.
Spread
cauliflower
pieces over a cloth to dry up moisture. (
Keep
atleast for 5 to 6 hours in shade)
6.
Heat
oil
and allow to cool.
7. Dissolve grated
jaggery
in vinegar (Do not
heat
)
8.
Mix
cauliflower
pieces with all the mentioned
ingredients
and powders. Finally
mix
jaggery
vinegar
mixture
.
9.
Add
cooled
oil
at the end and shake well.
10. Pickle can be served from very next day.
