Sweet & Spicy Mango Pickle

Ingredients
•
Mango pieces (chopped)
- 8 cups
•
Green chillies (slit)
- 25
•
Dates (seedless)
- ½ cup
•
Turmeric powder
- 1 ½ teaspoons
•
Mustard
- ½ teaspoon
•
Jaggery (grated)
- 1 cup
•
Salt
- 1 tablespoon
•
Red chilly powder
- 1 ½ tablespoons
•
Asafoetida powder
- ¼ teaspoon
•
Cinnamon clove powder
- ½ teaspoon
•
Groundnut oil
- ¼ cup
Method
1. Select slightly ripe raw
mangoes
which are sweet and sour in
taste
.
2.
Wash
well,
spread
over a cloth to
remove
excess moisture.
Remove
the skin and grated the
mangoes
.
3.
Heat
oil
in a pan,
add
mustard
. When it splutters,
add
asafoetida
,
mango pieces
, slitted
green chilly
and
turmeric powder
.
4.
Stir
for 1 minute and
add
grated
jaggery
.
Cook
in medium flame until
mango pieces
becomes slightly soft.
5.
Add
salt
and
dates
.
Fry
for 2 minutes in reduced flame.
Stir
in between.
6. Finally and cinnamon,
clove
powder
,
Red Chilly powder
and
remove
from fire.
7. Allow to cool and
store
in a dry bottle.
