Sweet Mango Bhath

Ingredients

• • Plain rice - 1 cup
• • Mangoes (ripe) - 2
• • Pure ghee - 2 tablespoons
• • Sugar - ½ cup
• • Cashew nuts - 1 tablespoon
• • Raisins - 1 tablespoon
• • Cardamom powder - 1 pinch
• • Saffron (prepare: dissolved in 1 tablespoon warm milk) - a little

Method

• 1. Wash and soak rice.
• 2. Cook little softer than normal consistency.
• 3. Allow it to cool completely.
• 4. Select good variety full ripe soft mangoes.
• 5. Peel skin, remove seed and squeeze the pulp (or cut into pieces and put in a mixie).
• 6. Strain the pulp to remove fibers.
• 7. Heat a heavy bottom vessel, add pulp with sugar, stir well.
• 8. When sugar is completely dissolved add cooked rice and mix gently till moisture dries up.
• 9. Remove from fire.
• 10. Add saffron milk, cardamom powder mix well.
• 11. Garnish with fried cashew nuts and raisins.
• 12. Mix rest of the melted ghee.

Variation

• • Cook rice in thickened milk, mango juice and water.
• • Make sugar syrup to soft ball consistency and add cooked rice.
• • Blanch almonds, remove skin and cut into stripes.
• • Mix fried almonds, saffron and fresh cream to the bhath.
• • Keep under dhum.
