Sponge Dosa

Ingredients
•
Par boiled rice
- 2 cups
•
Rice flakes
- ¼ cup
•
Sour butter milk
- 4 cups
•
Salt
- 2 teaspoons
•
Ghee/Oil (for frying)
- as required
•
Cooking soda
- ¼ teaspoon
Method
1. As
rice flakes
always has some mud, it should he washed well in
water
.
2.
Wash
rice
and
rice flakes
separately without mud and then
soak
them together in butter
milk
for 10 to 12 hours.
3. Next day
grind
it to smooth
paste
, with
salt
.
Add
soda
just before
preparing
dosa.
4.
Heat
a tawa and
pour
thick dosa. (Do not
spread
)
5. Put little
ghee
around and close with a lid.
6.
Cook
in medium flame for few minutes till there is no raw batter on top of the dosa.
7. Do not turn over.
Serve
hot with coconut chutney.
