Spinach Masala Pongal

Ingredients

Rice
- 1 cup
•
Green grams
- ¼ cup
•
Spinaches
- 2 bunches
•
Green chillies
- 7
•
Onions
- 2
•
Tomatoes
- 2
•
Green brinjals
- 3
•
Ginger
- ½ inch piece
•
Garam masala powder
- ½ teaspoon
•
Ghee
- 3 tablespoons
•
Cumin seeds
- 1 teaspoon
•
Cashew nuts
- 2 tablespoons
•
Curry leaves
- few
Method
1. Dry
roast
rice
and
dal
separately, till it turns light brown in colour.
2. Allow it to cool.
3.
Cut
onions
tomatoes
and
brinjals
finely.
4.
Slice
ginger
into thin long pieces.
5. Slit
chillies
into two.
6.
Cut
spinach
as fine as possible.
7.
Heat
oil
and
fry
green chillies
,
onions
,
brinjals
and
tomatoes
, in order.
8. When it becomes soft
add
spinach
and
fry
for few minutes.
9.
Add
ginger
,
masala
powder
,
salt
and four to five cups of
water
.
10. When it starts
boiling
add
rice
,
dal
and
keep
in pressure cooker, in a container.
11.
Cook
for-10 minutes.
12. After
removing
lid,
add
fried
cumin seeds
,
cashew nuts
and
curry leaves
.
13.
Mix
well.
14.
Pour
rest of the
ghee
on top and
serve
hot.
