Soya Chunks Briyani

Ingredients

Rice
- 2 cups
•
Soya chunks
- 1 cup
•
Water
- ½ liter
•
Fennel seeds
- 1 teaspoon
•
Cinnamon stick
- 1 inch
•
Green cardamoms
- 3
•
Cloves
- 3
•
Oil
- 2 tablespoons
•
Bay leaf
- 1
•
Cumin seeds
- 1 teaspoon
•
Mace strand
- 1
•
Cinnamon stick
- 1 inch
•
Green cardamoms
- 2
•
Onion
- 100 grams
•
Green chillies
- 2
•
Ginger-garlic paste
- 1 teaspoon
•
Turmeric powder
- ¼ teaspoon
•
Salt
- 1 teaspoon
•
Red chilly powder
- ½ teaspoon
•
Yogurt
- ½ cup
•
Mint leaves
- 1 teaspoon
•
Coriander leaves
- 1 teaspoon
Method
1. In a
mixing
bowl
add
rice
and
water
.
Soak
for 30 minutes.
2. In a another
mixing
bowl
add
soya chunks
and
water
.
Soak
for 20 minutes.
3. Take a pan
add
fennel seeds
,
cinnamon stick
,
cardamom
, and dry
roast
them.
4. Transfer it to blender and
blend
it into a smooth
powder
.
5.
Heat
oil
in a deep pan,
add
bay leaf
,
cumin seed
,
mace strand
,
cinnamon stick
,
cardamom
and
stir
.
6. Now
add
onions
,
green chilly
,
ginger-garlic paste
and
stir
until golden brown.
7.
Add
turmeric powder
,
salt
,
red chilly powder
,
fennel seeds
mixture
and
mix
well.
8. Then
add
soaked
soya chunks
,
yogurt
and
mix
.
9.
Cover
it with a lid and
cook
for 3 - 5 minutes.
10.
Add
water
,
mint leaves
,
coriander leaves
, soaked
rice
and
mix
well to combine.
11. Again
cover
with lid and
cook
for 12 - 15 minutes or until the
rice
is perfect done.
