Southe Kaayi Pachadi

Ingredients

• • Cucumbers - 2
• • Tamarind extract (thick) - 2 teaspoons
• • Oil - 1 teaspoon
• • Mustard seeds - ¼ teaspoon

Ingredients For Grinding Together

• • Coconut (grated, fresh) - 2 tablespoons
• • Grams/Chutney dal (roasted) - 1 tablespoon
• • Green chillies - 3
• • Red chillies - 2
• • Asafoetidas - a pinch
• • Mustard seeds - ¼ teaspoon
• • Salt - as required
• • Jaggery - a little (optional)
• • Turmeric powder - a pinch
• • Cumin seeds - ½ teaspoon

Method

• 1. Scrape outer skin and slice the cucumber into thin 1 ½ inch long pieces. (Check for bitterness)
• 2. Grind the ingredients mentioned to smooth paste with minimum water possible.
• 3. Mix tamarind extract after grinding.
• 4. Just before serving mix sliced cucumber.
• 5. Heat oil, add mustard seeds to crackle and add it to the pachadi.
