Shankarpali

Ingredients

• • Wheat flour - 1 cup
• • Sugar - ¾ cup
• • Water - ½ cup
• • Saffron - a little
• • Cardamom powder - ½ teaspoon
• • Ghee - 1 tablespoon
• • Oil (for deep frying) - as required

Method

• 1. Heat sugar and water together till it reaches one string consistency.
• 2. Remove from fire add cardamom powder, saffron, ghee and wheat flour.
• 3. Stir briskly till it becomes thick like chapati dough consistency.
• 4. Knead well when it becomes lukewarm.
• 5. Prepare marble sized balls from the dough and roll out into thin chapatis.
• 6. Press three chapatis together like a pile.
• 7. Deep fry in hot oil till golden brown.
• 8. While removing from oil it will be soft to touch. After few minutes it becomes crisp.
• 9. Instead of keeping the chapatis as a pile, fold each chapatis into four like a triangle and then deep fry.
