Sabudana Khichdi

Ingredients

Sabudanas (tapioca pearls)
- 1 cup
•
Peanuts (roasted)
- ½ cup
•
Salt
- as required
•
Sugar
- 1 teaspoon
•
Oil
- 3 tablespoons
•
Cumin seeds
- 1 teaspoon
•
Curry leaves
- 2 sprigs
•
Green chilly
- 1
•
Ginger (grated)
- 1 teaspoon
•
Potatoes (boiled)
- 2
•
Coconut (grated)
- ¼ cup
•
Coriander leaves
- 1 teaspoon
•
Lemon juice
- 1 teaspoon
Method
1.
Soak
sabudana
for 3-5 hours.
2. In a bowl,
add
drained
sabudana
, ground roasted
peanuts
,
salt
and
sugar
.
Mix
well and
keep
aside.
3. In a pan,
heat
oil
.
Add
cumin seeds
,
curry leaves
,
green chilly
,
ginger
and boiled
potatoes
.
Fry
for 2-3 minutes.
4.
Add
sabudana
and
cook
until the
sabudana
looses their opaqueness and starts becoming translucent.
5.
Add
grated
coconut
,
coriander leaves
and
lemon juice
.
Mix
well.
6.
Serve
hot and enjoy!
