Raw Mango Rice

Ingredients
•
Ghee
- 1 tablespoon
•
Cashew nuts
- 1 tablespoon
•
Ground nuts
- 1 tablespoon
•
Oil
- 1 tablespoon
•
Mustard seeds
- ½ teaspoon
•
Urad dal
- 1 teaspoon
•
Bengal gram dal
- 1 teaspoon
•
Red chillies (dried, split)
- 2
•
Mangoes (raw, grated)
- 1 cup
•
Turmeric powder
- ¼ teaspoon
•
Salt
- as required
•
Rice (cooked)
- 2 cups
•
Carrots (grated)
- 1 tablespoon
•
Asafoetidas
- a pinch
•
Curry leaves
- 2 sprigs
Method
1.
Heat
ghee
in a pan,
add
cashew nut
and
fry
until golden.
Keep
aside.

Heat
ghee
and
add
ground nut
and
fry
.
Keep
aside.
3.
Heat
oil
,
add
mustard seeds
when it splutters
add
urad dal
and
bengal gram dal
. When the
dal
browns,
add
dry
red chilly
, grated
mango
,
turmeric powder
and
salt
.
4.
Fry
until the
mango
is cooked well.
Keep
aside to cool.
5.
Add
cooked
rice
into a bowl and
add
the cooked
mango
mixture
, grated
carrot
, fried
cashew nut
, fried
ground nut
,
asafoetida
and
mix
well.
6. Garnish with
curry leaves
and
serve
.
